The live tourneys I've played generally increase blinds every 20 minutes, but they don't always double. Usually, they jump to 30/60 rather than 40/80. This also allows for chip exchanges into higher denominations each hour.
At the first hour break, the pit boss usually goes around to each player and exchanges their low denomination chips for 50 and 100 denomination. The same thing happens at the second hour break, but the denominations are 500/1000. This helps players continue making bets within the blinds and speeds play.
For instance, this is a typical progression:
10/20
20/40
30/60
50/100
100/200
200/400
300/600
500/1000
etc.
