You have really hit upon a true money maker for your group;however in order to make it work it needs to be something more established than a one nite event. There are many online sites that can help you run a tournament which is the way to go. Charge a per player price. Rake 15% for your group and pay out 85% to the players. I would suggest dealers for each table but then you have to cut into your payout to pay them or people from your group can do it for free.
