Let's see, I have a few I really like...
There's the one from my signature, of course.
Then a friend of mine wrote once "Excalibur, which is what a poker room would look like if poker playing 5th graders wrote a paper about the middle ages..." - that falls under the "funny because it's true" category and always makes me smile.
Non-poker I've always liked Voltaire's "I may disapprove of what you say but will defend to the death your right to say it".
